Recipe // Mini Pocket Pizzas

Firstly, so sorry for the lack of posts lately. I've been lacking motivation which due to the amount of free time I have during summer...it's kind of ironic.
If you follow me on Instagram, then you'll know that few weeks ago, I made some mini pocket pizzas. The boyfriend actually found it off Pinterest/9gag and they seemed impossible to mess up, so I decided to give it a go. They are seriously the easiest, quickest and tastiest things to make! Good if you need something quick to satisfy hunger at a large party or even as a daily snack when in university where time is of the essence, ingredients are relatively pricey and space is limited.
What you need
Cupcake trays Circular cookie cutters/bottle lid - as long as the cut out circle can fit nicely in your cupcake tray Tortilla skins - Easy to cut. When baked, they become crispy and hold their 'pocket' shape Your favourite topping - here I used spaghetti sauce, cheese & ham 

(Honestly, the best part about this recipe is that you can put whatever you want on your pizzas so get creative and make different flavours - have something new everydayyyy)
Method
1. Using your cookie cutter or circular template, cut out circles in your tortilla skins 2. Place the cut out circles into the cupcake trays 3. Add toppings of choice 4. Bake in the oven at 180degrees Celsius for about 15 minutes, or until the cheese has melted 5. Take it out of the trays and leave to cool 6. Enjoy!

So there you have it. Something super simple and quick.

one. message inside an egg: 

I find this so cool! Imagine cracking open an egg and finding a little note inside. Very simple tutorial which means you can make more than one - maybe let him/her go on a treasure hunt? ;) Unleash the creativity and paint the egg shells as you desire!

two. erasable notepad:

Choose your own background - it can be a funky pattern or a saying. Put it in a frame and you can write whatever you want on the glass. The best part - it's reusable!

three. crayon hearts

If you have any spare or broken crayons lying around, this would be the perfect gift. Melt and mould them into psychedlic hearts.

four. valentine fortune cookies

A similar take on the message in side the egg, but this time, it's edible! Decorate the takeaway box to suit the season. After all, everyone loves fortune cookies.

Possibly the easiest one out there - all you need are blank mugs and sharpies! Be as creative, witty and quirky as you want and transform that plain mug into a masterpiece. Google has loads of inspiration if you're stuck for ideas. Don't forget to bake it for a while afterwards!

For the: Sweet-Tooth

If your girl/guy likes all things sugar-y, sometimes, it's okay to give them what they want - whether it is small munch-worthy treats or a large cake all for themselves!

A little indulgence // Nutella + strawberries

I love Nutella - okay, now it's out there. I have it (almost) everyday with bread and I will have it with anything and everything (that's already sweet-ish of course). 

I think that Nutella is chocolate in disguised. The only 'chocolate-y' thing my parents will let me have in the morning :P

Anyway, I like strawberries - a lot. But sometimes they can be a tad sour... so what do I do? Combine it with Nutella!

You will need:

- A bowl of washed fresh strawberries

- A JAR OF NUTELLA

Mix them all together, and you've got yourself a tasty treat and a little something to indulge in.

This is also how I convince myself that it's okay to have Nutella because strawberries are healthy and it balances out. ;)

Mum & Dad's 18th Anniversary

I'm so sorry for not posting lately - been incredibly busy revising & catching up on homework due to end of year exams coming soon :/ *worried* Anyway, on Tuesday the 21st of May, it was my parents' 18th (I believe) wedding anniversary! 

I wore:

(It's my to-go LBD and I opted for a classy and elegant look)

They're super glittery and gold and I wore them ONCE to prom so I thought this was the perfect occasion to dig them out :D

Me being silly C:

Dad treated us to a buffet dinner at Legend Hotel and it was omnomnomnom, food heaven. I always have a sweet spot for desserts and needless to say, it didn't disappoint! The setting was incredible, the food was ah-mazing, and the desserts were no doubt the best part :D Chocolate fondue anyone? Unfortunately, I didn't manage to take any pictures of the food :( And at the end of the night, ALL of us were stuffed. We bring the meaning of 'gluttony' to a whole new level :P

It was a lovely evening & although my parents do have their not-so-minor squabbles, they've managed to handle me so far together...so that must be a good thing ;)
